Kakashi was already considered as a genius before he got Sharingan. At a ridiculously young age he was able to create chidori. Ok he couldn't use it effectively without sharingan but Im sure that he could have adapted it to become effective. Not to forget that he's the white fang son and Minato's disciple so he could have picked jutsus from these great influences and adapted them to his style.

I think that the sharingan has actually weakened Kakashi. It made him lazier and he felt obliged to develop it further as a legacy towards its previous owner (Obito believed to be the Sakura version of the Uchiha). That may have limited his potential since he focused on developing an asset which wasn't really designd for him.

Kakashi with a Byakugan, I think the differences would be

He would not have 1000 jutsu, it would be more like 50 but they would be 20 times stronger.
He would have more stamina and chakra as the Byakugan would be less stressful on his body.
Raikiri as we know it would be changed. With Sharingan the Raikiri is a running high speed thrust, with the Sharingan giving you a counter to any counterattack. With the Byakugan an its ability to see the chakra points and channels, the Raikiri would be an up close high speed poke & slice(maybe just poke) combo that stabs charka points & cuts chakra channels.

Team 7 Vs Zabuza & Haku. Zabuza being a water ninja & Kakashi being lighting ninja would have an easier time beating Zabuza with stronger lighting jutsu an more stamina.

Kakashi Vs Itachi. It didn't matter if Kakashi had the Sharingan, Byakugan, Rinnegan or regular eyes, once he was caught in Tsukiyomi the match was over.

In the Chuunin exams Sasuke would still be able to learn the Chidora(this would be its first appearence) by appling the Sharingan to it. Kabuto would of had a harder time getting away.

Deidara Vs Kakashi. Diedara would be at a disadvantage to a more lighting jutsu & stamina based Kakashi, without Kamui it would take longer not just for Kakashi but Diedara too, as his lighting jutsu would diffuse most of his earth jutsu.

Pain Vs Kakashi. This fight Kakashi would still outclassed. Chouji probably would have die or Kakashi's death would be different maybe even both of them would be die...

Kakashi Vs Edo Zabuza. I see it play out basically the same, its still a bad match up for Edo Zabuza & Haku.

he himself said that byakugan is better in foresight (prediction) than 3 tomoe sharingan...

He would still be able to learn all those techniques. Just ask Hiruzen. He's a genius and it shouldn't be a problem for him to learn all those techniques even without the sharingan.

Kakashi said it was better in insight. Not foresight.

We've never seen the Byakugan used as a method for predicting the path of enemies.

And if the Byakugan were better than a 3-Tomoe Sharingan, why couldn't Neji predict Naruto's movements in KN0? Sasuke was able to predict Naruto's movements in KN0 with a 3-tomoe Sharingan.

The Byakugan doesn't have "prediction" like the Sharingan does.

The point is that the only reason Kakashi was able to keep up with Zabuza's superior taijutsu is because that's exactly the thing Sharingan does. The Byakugan isn't a get out of jail free card the way the Sharingan is. The Sharingan instantly boosts your speed, boosts your reflexes, boosts your insight and boosts your genjutsu offense and defense. All byakugan does is give you greater sight. It's not going to help him the way Sharingan did.

It's also debatable whether the byakugan can even see through Hidden Mist since all they would see is a huge wall of chakra.
